Ingredients

Adjust Servings:
4 sliced Chicken Breast If you have more time, use chicken pieces.
2 chopped Red Onion
400g Couscous
1 Vegetable Stock
handful of Raisins
20 halved Cherry Tomatoes
170-200g washed Salad
1 zest and juice Lemon
2 tbsp of Moroccan Marinade

    Moroccan Chicken Couscous Salad

    My 15 minute Moroccan Chicken Couscous Salad is an excellent dinner idea when you are feeling lazy and in need of a quick, healthy and tasty meal.

    I would highly recommend marinading your chicken breast pieces the night before for maximum flavour. Whenever you marinade anything, the longer you leave it, the better the taste (within 24hrs).

    To speed things up, I recommend buying a good Moroccan dry spice pot (you can get in all supermarkets these days). But if you want to make your own 7 Spice Moroccan marinade, head to my Pinterest page.

    Marinade It

    1. In a large bowl, add the chopped chicken breast into 1cm cubes, add your marinade and lemon zest and bang in the fridge overnight... 20-30 minutes in the fridge is also fine.

    Cook It

    1. Add a splash of olive oil to the non-stick frying pan on a medium heat and start cooking the chicken and onions until golden and cooked. Add 50ml of water if you want to make a sauce to go with it.

    2. While the chicken is cooking, add enough boiling water to just cover the couscous in a bowl and add the stock, a splash of olive oil and the raisins, combine well and cover for 3 minutes.

    3. Add the salad and cherry tomatoes to your plate, followed by the cooked chicken and fluffy couscous. Enjoy.
