Ingredients

  • 150 g 150 Oats

  • 30 g 30 All-purpose flour

  • 200 g 200 Mixed berries

  • 1 tsp 1 Baking powder

  • 1 tsp 1 Cinnamon

  • 1/2 tsp 1/2 Vanilla extract

  • 1/2 tsp 1/2 Salt

  • 1 tbsp 1 Honey

  • 120 ml 120 Milk

  • 2 2 Egg

  • Coconut oil or butter for frying

Directions

  • In a large mixing bowl, combine the oats, flour, baking powder, cinnamon, and salt.
  • In a separate mixing bowl, whisk together the honey, eggs, milk, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined.
  • Fold in the blueberries, raspberries, blackberries, and chopped strawberries.
  • Using a spoon, scoop out the fritter batter and drop it into the frying pan. Cook for 2-3 minutes on each side or until golden brown. Repeat until all the batter has been used.
  • Serve the fritters warm with your favourite toppings, such as yoghurt, maple syrup, or extra berries. Enjoy!
